Cornelius ApplejackMade from 100% home grown apples. Harvest Spirits carefully distills fermented hard cider twice in small batches. Aged for 2 years in 50 gallon ex bourbon casks, then finished in 15 gallons quarter casks. Because of the aging process, this spirit comes out more like a bourbon than a brandy. Cornelius Applejack is not charcoal filtrated, naturally gluten free with no sugar and no additives. 40% ABV, 80 Proof

this gin is an infusion of young juniper berries

though it really shines straight up

then finished in Vermont maple syrup barrels

adding complexity and depth before the whiskey even enters the still

dry and spicy with a nice warmth

but turns the corner with the more esoteric botanicals like Eucalyptus
