Yields for the top wines are miniscule, so the Pinot Noir R 2010 for instance had its potential yield cut in half through green pruning throughout the growing season. Harvest is by hand with rigorous sorting though the low yield coupled with the generally dry conditions ensure that very little rot will need sorting out. The ferment begins spontaneously
