Pressed from a blend of the olives grown on the estate arbequina, hojiblanca, picual and morisca to give an oil which is always delightfully well balanced and versatile. Merula has a delicate yet layered aroma; sweet meadow grass and perfumed marjoram give way to a gentle almond nuttiness, with some bitterness reminiscent of hazelnut skins and a fruity apple
