Stone fruit and acacia honey on the suave and generous palate
it is a combination of the Enmore and Diamond Coffey stills and the Port Mourant double wooden pot still
then spontaneously fermented in stainless steel
the wine undergoes a long fermentation which extends forty to fifty days
a small village located in the heart of the Centre-Loire area
This blend has been unchanged since 1945 - a proprietary house style of Chardonnay
The grapes are hand-harvested and fermented in stainless steel tanks-helping to preserve the bold fruit flavors
The palate is juicy
the best-known commercial example of the Bitter style is Campari
yet there is none of the excessive yeastiness or clumsy creaminess that sometimes blur terroir expression in such long-aged sparkling wines
with underlying fresh fruit and crushed spice notes
