Ageing The wine spent 17 months in barrel (35% new French) with two rackings and no fining or filtration

but predominantly in the hugely sought-after single cask releases that began to appear in 2007

barbecue and black cherries create the aromatic qualities

with tight tannins and high acidity

pepper and spice are also apparent
