Corsu VecchiuCorsu Vecchiu is a firm sheep's milk tomme from the Socit Fromagre Corse. Located in Upper Corsica, this fromagerie strives to preserve and enhance the traditions and richness of the land that they have nicknamed the Shepherds Island. They maintain a deep relationship with the eighty five local shepherds with whom they work, and Corsican sheep are unanimously recognized for their hardiness and the rich milk they provide, which is collected seasonally.
