The wine was then racked into French oak barrels (20% new) and aged for 10 months before being bottled with no fining and a very light filtration
and Port (7%) casks
Once it has been aged to perfection
Palate: balanced acidity and long fruity finish
Spain they have been given new life and purpose
stainless steel autoclaves
While it can go with chicken or pork
Nose: Vanilla Almond Creme
or a spicy ratatouille
they then transferred it to casks that have been freshly emptied of an Islay single malt Scotch
which gives it a flavor almost closer to a whiskey than a rum
