Domaine, Pavelot

Domaine, Pavelot(from Les Chaumes). Enough wood to merit pointing out is present on the vaguely exotic nose of apple compote, lychee, passion fruit and jasmine tea scents. There is both fine volume and power to the larger scaled flavors that coat the palate with dry extract on the sappy, moderately long and noticeably rustic finale. This delicious effort wont win any awards for refinement, but it should repay 5 to 8 years of keeping.

Smoky reduction masks all but hints of cool citrus

As is usually the case this is notably more elegant than the straight Chablis with its nose of pretty citrus

Moderate reduction masks everything but a touch of petrol character

This doesn’t have quite the overall depth of the Clos de Vougeot but it’s notably finer

If it can add top notch depth with time it should merit

giving this 2016 an exotic

plum and violets that complement well the mouth coating and relatively fine mineral-driven flavors
